I am totally new to desert driving, I am actually planning to join the club in the next weeks, so I would not comment on the Grand Cherokee ability to perform on the desert.

My reflection would be the following: what year is your Grand Cherokee?
First and second generations, produced from early 1990s until mid 2000s, were extremely capable off-roader. When I was in Europe I could see many of them with light to extreme modifications performing on all type of off-road context).
The more recent third and current generations have become more civilized, i.e: there are more SUV than an actual off-road truck, Jeep actually built them with the intent to be more a luxury SUV to complete against Mercedes ML, Audi Q7, BMW X5, etc...

Don't take me wrong: I've seen videos of people bringing their latest generation of Grand Cherokee into tough tracks and perform well, but I believe that when you'll get any damage it's going to be expensive to fix it cause there are too many things that could break.

The latest generations are full of electronics and sensors and while this increases the comfort/drive-ability on the street, it makes the car more prone to damages/failures when off-road. I had the chance to look behind the front bumper of a 2014 Grand Cherokee and I was amazed by the amount of cables and sensors and parts that were "hidden" by the bumper: if you smash it badly (and I read on this forum that it will happen quite often in the desert), your wallet will start to cry.
